This research aimed to propose the useful implication in the operation of dessert café by evaluating the level of service quality of dessert café by grasping the service quality of dessert café, customer emotion and the intention of action targeting customers of dessert café being operated currently. Total 500 copies of questionnaires have been distributed in the dessert café from October 10, 2016 to November 10, 2016, the factor analysis and the reliability verification have been implemented using SPSS 22.0 and AMOS 22.0 for 412 copies excepting the questionnaire that the centralization trend is severe, 34 copies of improper questionnaire in the analysis out of 446 copies of collected questionnaires out of these, the covariance structure analysis has been implemented to verify the proposed research hypothesis. As a result of validity and reliability analysis for the measurement concept for the hypothesis verification, the service quality appeared as 5 factors of materiality, reliability, certainty, perceptual openness and reactivity, etc., as the customer emotion has been deducted as the pleasure, dominance and the intention of action has been deducted as the single dimension, the result that the hypothesis is verified based on this is as follows: If the analysis result is summarized, first the materiality, perceptual openness appeared to affect the significant positive(+) effect on the pleasure, the reliability, certainty and reactivity didn't appear to affect the significant positive (+) effect on the pleasure being the low rank dimension of customer emotion. Second, even though the reliability and certainty appeared to affect the significant positive (+) effect on the dominance, the materiality, perceptual openness and reactivity didn't appear to affect the significant positive (+) effect on the dominance being the low rank dimension of customer emotion. Third, even though the certainty appeared to affect the significant effect on the intention of action, the materiality, reliability and perceptual openness and reactivity didn't appear to affect the significant positive (+) effect on the intention of action. Finally, the dominance appeared to affect the significant effect on the intention of action. But, the pleasure didn't appear to affect the significant positive (+) effect on the intention of action. Accordingly, the implication useful in the dessert café has been proposed based on the verification result.
