Erwinia carotovora is one of the plant pathogens and releases an enzyme called pectate lyase. The enzymeplays an important role in the pathogenesis of the plant soft rot caused by hydrolyzing the pectin tissue in plants. The optimum pH of E. car growth is the neutral condition, and pectate lyase has optimal activity pH at 5.5 ~ 10.5. In this study, lactic acid and citric acid used as acidity regulators among sanitizers and disinfectants on food utensils investigate the antibacterial activity against E. car below the optimum pH (< pH 4).
