Sodium metabisulfite, potassium metabisulfite, sodium sulfite, sodium bisulfite, and sodium hydrosulfite belongs to sulfite food preservatives. The sulfites are mainly used for preventing the browning reaction of fruits, winemaking, and processed food preservation by having strong reducing power due to their structural characteristics. And they have antibacterial effects as food preservatives by inhibiting the activity of the proteins such as enzymes present in cell membranes of bacteria.
