The controlling of α-glucosidase activity plays a crucial role in type II diabetes. Artemisia capillaris (AC) is well known for various pharmacological effects such as anti-dementia, antioxidant, and anti-pathogenic bacterial effects. The fermentation was performed to increase α-glucosidase inhibitory activity (AGI) and maintain cholinesterase inhibition of AC by probiotic Leuconostoc mesenteroides MKJW (MKJW).
