Diglyceride is a useful lipid that can be used as shortening and emulsifier. Also, it is known to suppress fat accumulation compared to triglyceride. It exists in trace amounts in nature and can be synthesized from oils through hydrolysis using chemical and enzymatic catalysts. Enzymatic reaction can proceed with mild conditions than chemical reaction, and can react to specific sites due to specificity of enzyme.
