This study investigated changes in cyanogenic compounds (amygdalin and prunasin) content of Japanese apricot (Prunus mume) with different fermentation periods. Methods for determining cyanogenic compounds were validated by determining specificity, linearity, limit of detection (LOD), limit of quantification (LOQ), precision, and accuracy using an high-performance liquid chromatography-photodiode array detection system.
