The food service industry in Korea has grown exponentially for a short duration of time. This rapid expansion was made possible, in part, by the domestic economic growth. The influx of international foodservice establishments to tap the potentials of Korean market has expedited the phenomenal growth of the foodservice market. The cooking becomes popular because of the ubiquitous TV shows. Consumers are getting more discriminated and more diverse. The restaurants specializing in fusion cuisines are gradually expanding their markets. Today, new customers are dictating the pace and direction of foodservice industry changes. The study examined the characteristics of the X generation in terms of food consumption. Fundamental changes are characteristics of the X generation. The Xers are more flexible and independent. They are hybrid consumers, spontaneous and unpredictable. The 119 Xers in the Seoul area are selected for this study from foodservice establishments from January 10 to February 17, 1999. The findings show that 27.7% of Xers prefer to eat at Korean restaurants. It also reveals that they select their restaurants because of food quality and ambience. The implications are that the findings about the characteristics of the Xers may be valuable information for both the industry practitioners and the academic researchers in the area of foodservice industry.
