The purpose of this study is to understand the characteristics of vegan restaurants and study the impact of these characteristics on establishing customer loyalty for the continued growth of the vegan food industry at a time when the vegan market is expanding. The survey participants were selected from vegan restaurant visitors. The sample was selected from consumers who had visited a vegan restaurant within the last three years. The survey was conducted from December 1, 2023 to March 31, 2024 through a specialized research company, and 232 valid surveys were ultimately used for analysis. Data processing involved collecting data from questionnaire responses and processing the data using the statistical program SPSS 22.0. To achieve these research objectives, based on previous research, the characteristics of vegan restaurants were set as animal protection, environmental conservation, and ethical consumption. We wanted to verify the relationship between the influence of vegan restaurant characteristics on customers’ cognitive loyalty and active loyalty by customers who have experienced vegan restaurants. Therefore, we presented important academic suggestions by examining the characteristics of vegan restaurants and the selection attributes of customers. It is significant that we provided information that can be used as a marketing strategy to increase customer loyalty at restaurants.
