The purpose of this study is to evaluate the anti-inflammatory and skin whitening effects of peanut sprout and to find out the optimal germination time for the best functional activity. Samples were harvested with time during the germenation period and prepared by extracting with 70% ethanol to investigate their functionality and cytotoxicity. No cytotoxicity was shown to be in the entire concentration range used for the functional activity measurement using RAW 264.7 cells and B16F10 cells.
