As a result of previous research, it was found that Lactobacillus plantarum Hong KFCC 11556P (LW) isolated from water kimchi converts ferulic acid (FA) into an unknown substance, Compound X (CdX), during the fermentation of rice bran. Compound X produced during the fermentation of rice bran is predicted to be a metabolite of FA.
