Patulin is a toxic secondary metabolite produced by Penicillium sp. on apples and pears. In this study, we investigated the effects of ascorbic acid and the combination of ascorbic acid and ferrous iron on degradation of patulin in pure pear juice. The analytical method using HPLC-UVD showed high linearity (r²>0.995) for patulin in the range of 0.1 to 2 μg/ml. The recovery rate of patulin in pear juice was 102.30-131.75% along with 2.55-14.06% of relative standard deviation.
