The purpose of this study is to examine the present tradition pattern of the ‘Bulchunwee Jerye’ (a kind of Ancestral ritual) in Chungcheong region. Bulchunwee Jerye is included in the ancestral ritual of Confucianism with the date of death of the ancestors, but it is distinguished from general ancestral ritual in that it does not bury the ancestral tablet and perform a ritual at home permanently without relocation. In addition, it is a requirement to increase the dignity of the family by its existence alone. Therefore, it is clear that the ritual character of the ‘Gagarye(家家禮)’ is clearer than that of the general.
However, until now, the field research on the Bulchunwee Jerye tended to be overly concentrated in the Gyeongbuk region, so there were many insufficient points to examine the universal characteristics and regional specificity of the Bulchunwee Jerye. Based on the consciousness of this problem, I examine the concrete aspect of the Bulchunwee Jerye in the Chungcheong region and discusse the composition and the cooking method of the offering used in the ritual from the viewpoint of the norms and practices of the the proprieties. The sacrifice is a concrete object and material that Confucian ideology is interpreted and embodied as a food, and it is a major component that ‘Gagarye(家家禮)’ is pregnant.
In this paper, I examined the case of the transformation of the old norm which set in the 『Jujagarye(朱子家禮)』(Confucian ritual book) into the Korean society, only focusing in meat(肉), cooked meat(炙) and fish(魚). As a result, meat, cooked meat and fish of 『Jujagarye』 were converted into various forms of offerings such as ‘jeok(炙)’, ‘tang(湯)’ and so forth in Joseon society, And I also knew that Confucian scholars of Joseon wanted to reveal the hierarchy of the Bulchunwee Jerye by varying the cooking method or number of offerings.
