After the conquest of the Mongols, it was implemented the cultural transmission and exchanges covered Eurasian region. The dynamics not only brought the cultural fusion in the center of the Mongol Empire, but it also changed the culture of the conquered regions. This paper analyzed the cultural impact of the Mongols in East Asia focused on the culinary culture. In the book of Yin-shan Zheng-yao (飮膳正要) written for the health of the great Khan, the diverse culinary culture was contained such as food of the traditional Mongol, Persia, Turk, India, and the medical knowledge of China.
The changes in culinary culture gradually spread to the periphery of the Mongol Empire. Since the peace treaty between Mongol and Goryeo(高麗) in 1260, the culinary culture of the Yuan was influenced to Goryeo. It went through localizing process to fit in the Goryeo. Sarup (舍兒別), a soft drink introduced in Yin-shan Zheng-yao also introduced in Korean peninsula. The beverage was from Islamic region to the Mongol Imperial court in the 14<SUP>th</SUP> century. It went through a process of transformation acclimating in the circumstances of the Korean peninsula.
