The purpose of this study is to investigate the difference and chemical characteristics of extracts before and after fermentation using discarded avocado skin, and to explore the applicability as a functional cosmetic material. It is believed that the functionality can be improved by fermenting glycoside-type compounds within the avocado perihelium into lactobacilli and converting them into aglycon-type compounds. As a result of identifying the 16S-rRNA sequence of lactic acid bacteria isolated from plants, the lactic acid bacteria for fermenting avocado skin were identified as Lactiplantibacillus Plantarum and Lactiplantibacillus Herbarum. The avocado skin extract showed a high antioxidant content. As a result of testing cytotoxicity, it was maintained at 80% or more at a concentration of 250 μg/mL, and as a result of confirming the DPPH radical scavenging activity, it was confirmed that when the concentration of the avocado skin extract was less than 62.5 μg/mL before fermentation, the DPPH scavenging activity of the fermented avocado skin was high at a concentration of 125 μg/mL or more. It was confirmed that the ABTS radical scavenging ability was high at a concentration of 0.25% or less. In the MMP-1 inhibition test and the procollagen type I secretion experiment, MMP-1 activity and expression were reduced, and the secretion promotion effect of procollagen typeⅠ was confirmed. In the NO production suppression test, avocado skin extract before and after fermentation was found to have a relatively high NO inhibitory effect on NO production, and human application tests of avocado skin extract before and after fermentation were conducted to determine it as a safe cosmetic material with low potential for skin irritation.
