This study examined the changes in the "Food and Nutrition" section of the Home Economics textbooks from the 7th to the 2015 revised national curriculum by investigating and analyzing the Home Economics textbooks and their corresponding curriculum guidebooks. The entire text presented in the "Food and Nutrition" section of the Home Economics textbooks was analyzed. Using text mining techniques, and the top 15 words were extracted and visualized using word cloud and language network analysis methods. The results were summarized as follows: First, the proportion of the "Food and Nutrition" section in the Home Economics textbooks was significantly decreased with the expansion of the "Family Life" section in the 2015 revised curriculum. Second, the Home Economics textbooks comprehensively covered the content that should be included in the "Food and Nutrition" section, and the content was systematically described more professionally. Third, the words that most frequently appeared in the Home Economics textbooks across all the curricula were "consumption", "nutrition", and "cooking", and the words with high centrality were "vegetables", "milk", and "fish". The words that continuously appeared from the 7th curriculum to the 2015 revised curriculum were "consumption", "cooking", "nutrition", "energy", and "ingredients", indicating that the content is focused on the cooking and consumption of food ingredients, and nutrition and energy.
We hope that the Home Economics textbooks being developed based on the 2022 curriculum will systematically present a variety of information that reflects the changes in 21st-century dietary habits, thereby contributing to the enhancement of adolescents" health.
