This study examined the uses of jang word forms in dialect materials by dividing its forms into ‘간쟝, 지령’ and ‘된쟝’ based on precedent literature. The upper categories of ‘jang’ refer to the state before separating ‘ganjang, 지령’, doenjang, and ganjang in literature, and this was also identified in dialects. 醬油, ‘간쟝’ meaning ganjang has been changed to the modern Korean ‘ganjang’ through the from of ‘간쟝>간쟝>간장’. ‘지령’ is also identified as a modern dialectal form of Gangwon, Gyeonggi, Gyeongsang, and Hamgyeong province, and such forms as ‘지령, 지렁’ and the hypercorrection of palatalization appeared from the 17th century. On the other hand, looking at the entry of ‘지령’ as a headword in <Dictionnaire coréen-français>, it seems that ‘지령’ was used in the same sense as ‘ganjang’ without recognition of ‘지령’ as a dialect, at least at that time. In other words, ‘지령’ was not a dialect of specific regions at least for a certain period of time, but an equivalent headword to ‘간쟝’ and it is considered to have transformed into a dialect form. Therefore, various forms of ‘지령’ could be identified even in modern Korean. When it comes to the forms falling within the modern Korean ‘doenjang(-醬)’, ‘된쟝, 됨쟝, 된댱’ and the ‘토쟝, 건쟝’ were identified. In addition, it was possible to find a difference in meaning between literary language and a dialect, since doenjang was also used to mean ‘jang’ in a dialect. This is because both ganjang and doenjang are made with the same ingredients, so ‘장’ could be seen as having meanings of not only ‘ganjang’, but also ‘the state before separating ganjang and doenjang’, ‘the collective name for ganjang and doenjang [except gochujang]’, and ‘doenjang’. Besides, this study could find that it was regarded as jang(汁醬) or kimchi(汁菹) in terms of ‘jeupjang’.
