In order to evaluate the potential of hydrolysate from silkworm fed Cudrania tricuspidata leaf (CTSH) as a functional food material, we investigated its nutritional and functional activities. Enzymatic hydrolysis of powdered silkworm using viscozyme, bromelain and alcalase was performed to produce the CTSH, which was determined by SDS-PAGE and NPN assay. The contents of crude protein, crude fat, crude ash, moisture, and carbohydrate of the CTSH were 60.01±1.15%, 5.10±0.61%, 8.60±0.12%, 12.49±0.31%, and 13.81±1.72 %, respectively.
