In this study, for the development of excellent Aspergillus oryzae (A.oryzae) starter, soybean Meju were manufactured using 7 kind of A. oryzae, and quality analysis was performed. The manufacturing method : soybean Meju, the water was removed for 1 hour after immersing the soybean for 15 hours. Steaming at autoclave 110℃ for 30min it was cooled to room temperature and inoculation of A. oryzae starter (7 types) 1%. The fermentation conditions : 2 day at temperature 30℃, humidity 80%.
