This study was conducted to evaluate the effect of freezing and thawing conditions on physicochemical characteristics of passion fruit (Passiflora edulis). Passion fruit were frozen at -20℃ (Air Freezing, 20AF) and -40℃ (Immersion liquid Freezing, 40IF), -196℃ (Quick Freezing, 196QF) and stored for 30 days at -20℃. Frozen passion fruit were thawed at 25℃ (Room Temperature, RT) and 17℃ (Running Water Temperature, RWT). Thawing at high pressure thawing (200 ㎫, HPT) was also applied.
