In this study, the onion (Allium cepa L.) peel heat-treated at various conditions of roast (5, 10, and 20 min), steam (5, 10, 20, and 30 min) and steam (20 min) after roast (5, 10, and 20 min) were analyzed to determine quality characteristics, antioxidant activity and quercetin contents. Moisture, protein, fat, L (lightness), a (redness), b (yellowness) values, pH and acidity of heat treatment (roast, steam, and steam after roast) onion peel samples ranged from 0.2∼10.7%, 1.4∼2.0%, 0.5∼1.4%, 44.2∼62.3, 11.9∼13.1, 14.1∼17.5, pH 4.2∼4.4, and 0.2%, re ... 전체 초록 보기
