In a previous study, we selected salting and drying conditions using fermented product (mixed soybean and anchovy) to develop croceine croaker Gulbi with high quality. This study was carried out to analyze the quality characteristics of croceine croaker Gulbi according to heat treatment conditions. The quality characteristics of croceine croaker Gulbi by steam (100℃, 10 min) and oven (150℃, 10 min) treatment were compared.
