The purpose of this study was to investigate the sensory properties of germinated wheat beverage (GWB) using check-all-that-apply (CATA), and the relaxation-related brain wave through electroencephalogram (EEG) after consuming GWB. The GWB enhanced with γ-aminobutyric acid (GABA) was prepared with hot tea infusion (0.8, 2, and 4 g/100 mL) and cold beverage types (25, 50, 75 g/ L). The overall preference and sensory characteristics by CATA explained that consumers preferred the two beverages of hot tea infusion of 0.8 g/100 mL and cold beverage types of 25 g/L compared to other samples, ... 전체 초록 보기
