Plant-extracted polysaccharides have potential anti-obesity effects through the regulation of gut microbiota. Molokhia (Corchorus olitorius L.) leaves are rich in water-soluble polysaccharides; in this study, we investigated the effect of molokhia leaf polysaccharide fraction (MPF) on gut health and anti-obesity. MPF was analyzed for methylation by GC-MS and the structure was mainly composed of rhamnogalacturonan-Ⅰ (RG-Ⅰ) structure.
