This study compared the sodium-related dietary behavior and low-salt dietary intake by considering the gender and the salty taste assessment of Chinese international students in Jeonbuk area. Totally, 283 Chinese international students were tested using salty taste kits, and assessed using self-administered questionnaires. In the self-reported salty taste evaluation, 31.9% male students reported ‘slightly salty’, whereas 25.3% female students reported ‘slightly unsalty’. Approximately 55.9% female students reported that sodium reduction was necessary, whereas 63.7% male students did not report necessity to reduce sodium. In the salt taste assessment, 38.9% male and female students reported food as ‘neither unsalty nor salty’, whereas 30.7% students reported ‘salty’. Compared to female students, male students had a significantly higher score of sodium-related dietary behavior. Significantly highest scores were obtained for sodium-related dietary behaviors in the ‘salty’ group, and for low salt dietary attitude in the ‘unsalty’ group. Positive correlations were observed between salty taste assessment and length of residence, BMI, blood pressure, and sodium-related dietary behavior, whereas salty taste assessment was found to be negatively correlated with low salt dietary attitude. In conclusion, our results indicate the necessity to impart food culture- oriented practical nutrition education to Chinese international students in Korea, to help modify their eating behaviors and reduce dietary salt intake.
