Human taste receptors in their tongues recognize five tastes: sweet, umami, bitter, sour, and salty. These senses of taste play an important role in perception and sense. Among the tastes, bitter is important for determining food safety and in development of drugs in the pharmaceutical industry. Based on the sense of bitter taste, humans can avoid intake of spoiled and toxic foods. Reducing and masking the bitter taste can reduce the repulsion to pharmaceutical ingredients.
