Yuza (Citrus junos) is mainly produced in Korea and Japan with diverse uses in different dishes. The purpose of this study was to quantitatively analyze the trends of yuza usage as an ingredient in dishes and categorize them. We extracted and analyzed recipe data for twenty years (from January 1, 2000 to December 31, 2019) from Japan’s largest recipe sharing website using text mining. We collected 33,690 relevant food recipes, then classified their yuza usage into 11 categories. We found that 17,741 recipes (52.7%) used yuza as ‘seasoning’, and this accounted for more than half of the total collected recipes. Yuza kosho had the most data counts within the ‘seasoning’ category (47.1%), and yuza usage in the rest of the category (ponzu, miso, vinegar, chili powder, salt) accounted for 5.6%. The use of yuza as ‘fruit’ (raw, peel, juice) accounted for 42.7% of the total usage and its use in the ‘preserved in sugar’ category (tea, jam) were only 4.7%. The results indicated different usage patterns in Japan as compared to Korea. Also, the month-by-month analysis showed that the frequency rates of usage of yuza in the ‘fruit’ and the ‘preserved in sugar’ categories increased in winter and decreased in summer. In June, 73.7% of the yuza usage was as yuza kosho, which is a segment within the ‘seasoning’ category. In December, 71.1% of the yuza usage was categorized as ‘fruit’, while its use as ‘seasoning’, yuza kosho and yuza ponzu were season independent and consistent throughout the year. After analyzing the recipe data of 15 major dish categories using yuza, it was observed that the ratio of yuza use in confectionery was 21.5%, followed by salads (17.9%), pasta (11.3%), pickles (10.4%), and bread (7.7%). We believe that this study provides the opportunity to understand the differences between the food cultures of Korea and Japan by analyzine the usage trends of yuza.
