This study was conducted to survey the awareness of alternative medicine among culinary workers and also survey this awareness according to such general characteristics as gender, age, education, length of career, and the work-place. Male culinary workers were more aware of and more experienced with alternative medicine than were the female culinary workers. Awareness of and experience with alternative medicine increased with age, the education level, and the length of career. Regarding the work-place, culinary workers in hotels were more aware of alternative medicine, more experienced with it, more willing to utilize it in the future, and more willing to participate in education on alternative medicine as compared with that of culinary workers in other organizations. Regarding the correlation between culinary workers’ general characteristics(age, education, career) and the awareness of alternative medicine, awareness of alternative medicine was positively correlated with age (p<0.01), education level (p<0.01) and length of career (p<0.01). In essence, culinary workers’ awareness of and experience with alternative medicine increased with increasing age, education, and length of career, and culinary workers in hotels had better awareness and greater experience with alternative medicine. It was concluded that culinary workers had positive thoughts and the will to utilize food therapy as alternative medicine. We hope our findings serve as the foundational data for developing a professional alternative medicine curriculum for culinary workers.
