Identification of the desirable dose of the disinfectants used in food industry should be based on the consideration of not only the health risks to users or environment but also the antibacterial efficacies of active substances. Current standards and regulation for the use of the quaternary ammonium chlorides (QACs) are based on health hazards from the exposure to human body, whereas the analysis on the wide range of working-concentration (from inefficacy to the highest effect) for the proper use of QACs with the perspectives to the pathogen control is rarely reported.
