In this study, the content of carotenoids (α-carotene, β-carotene) according to the types of tomatoes (tomato, cherry tomatoes, salty tomatoes, black tomatoes, jujube cherry tomatoes) and the process (raw, blanched) was analyzed by HPLC. Alkali hydrolysis was performed for carotenoid analysis. As a result, it was shown that the carotenoid content of the 10 kinds of samples was different according to the type and treatment method.
