This study focused on the protease activity of the gold and green kiwi juice and evaluated its effect on physicochemical properties and tenderness in pork loin injected with 10% and 20% gold and green kiwi juice (10%GR, 20%GR, 10%GO, and 20%GO), respectively, according to incubation time (0, 4, 8, 24 hrs) at 8℃. In addition, the formation of peptides with antioxidant activity for kiwi juice"s ability to hydrolyze proteins present in pork loin was evaluated.
