Sword bean (Canavalia gladiata (Jacq.) DC.) has long been used as food ingredient and herbal medicine in East Asia. However, there has been no study on the analysis of active compounds and physiological activity according to the extraction conditions of edible part. Sword bean was extracted with hot water and different concentration of ethanol for comparative analysis. A major indicatory active component was found to be rutin which was highest at 30% ethanol extract. Total polyphenol of sword bean was highest with 70% ethanol extract.
