This study identified the impact of job satisfaction and turnover intention according to the work execution importance element of cooks at large discount stores in the Seoul and Gyeonggi regions to suggest ways for improving cooking work at large discount stores. The results of the study are as follows. Important factors per job of cooks at large discounts stores involved 33 out of the total of 47 questions, and eleven factors were designated as hygiene control, customer management, safety management, inspection management, material management, job management, freshness control, work management, menu management, opinion management, and inventory control. For job satisfaction, it was found that job management (.454), work management (.484), and inventory control (.310) had an impact. This shows that reflecting fair evaluation of work and improvement plans for job execution, and increasing opportunities for education and training are important, and that is also necessary to simplify inventory and expiration verification procedures by implementing a computer system for inventory management work. For intent to change jobs, customer management (.649), safety management (.312), menu management (.360), and inventory control (.412) had an impact, and that it is necessary to separate cooking work and customer management work by setting a team in charge of handling customer complaints, while providing regular training such as for safety to decrease rates of safety accidents, while also drafting a manual for safety accidents to continuously conduct manualized safety training to decrease employee turnover rates.
