Ginsenosides have been regarded as the principalcomponents responsible for the pharmacological and biologicalactivities of ginseng. The transformation of ginsenosides withRc into Rd, but the reactions were slow. When the crudeenzymes obtained from several lactic acid bacteria were usedfor transformation, those from Bifidobacterium sp. Int57exhibited the most potent transforming activity of ginsenosidesto compound K. In comparison, a relatively higher levelof Rh2 was produced by the enzymes from Lactobacillusdelbrueckii and Leuconostoc mesenteroides. These resultsprocess to obtain specific ginsenosides using the appropriatecombination of ginsenoside substrates and specific microbialenzymes.
