The sole use of the glucanhydrolase (exhibiting bothdextranase and amylase activities) from Lipomyces starkeyihydrolyzed the soluble polysacharides in sugar syrup moreefficiently than a mixed treatment using both comercialstale sugar cane juice resulted in a yield of square, light-colored sugar crystals.
