D-Psicose (D-allulose) has received considerable attention as a next-generation sweetener because of 0.3% of calories relative to sucrose. D-Psicose also has a strong potential as an alternative sweetener for obese and diabetics with various biological functions. Recently, biological production of D-psicose from D-fructose using D-psicose 3-epimerase (DPE) has been developed.
