In order to investigate the factors that microbial diversity in Meju affects the quality, we collected traditional Meju from across the country and analyzed the microbial community structure through next-generation sequencing. Sixty traditional Meju samples were collected for analysis in 9 regions: Gyeonggi, Gangwon, Chungbuk, Chungnam, Jeonbuk, Jeonnam, Gyeongbuk, Gyeongnam, and Jeju.
