As consumers’ reluctance to artificial synthetic food coloring agents increases, the demand for natural product-based pigments to be applied to the food industries is increasing significantly. As one of the most widely used pigments in food industry, anthocyanins are found naturally in a number of foods because it is safe and reliable.
