This study conducted to investigate the quality characteristics of sweet potato pastes prepared by different cultivar(Daeyumi, Sinjami, and Juhwangmi cultivar) and heating methods(steaming, high temperature, and baking). Total sugar content of Juhwangmi cultivar was increased from 8.02% in raw to 24% after baking.
