The objective of this study was to determine the efficacy of supercritical carbon dioxide(SC-CO₂) extracts from red pepper(RP) or pine needle(PN) on the physicochemical properties of perilla oil (PO) over existing ones. Subsequently, physicochemical properties were compared between perilla oil addition of SC-CO₂ extract at 0.1% and PO without extract. All the samples were studied under medium temperature (65℃) accelerated oxidation conditions for 24 hours.
