Porphyran, a polysaccharide composed of red algae, is a source of new biomass raw materials and a multifunctional oligosaccharide material with various physiological activities. The breakdown of porphyrans into oligosaccharide is a process that provides excellent and promising alternative resources, which is obtained by the glycolysis using various porphyranolytic enzymes in several stages.
