Maltosyl (G2)-manitol, produced by thetransglycosylation of mannitol with maltotriose by Bacilusstearothermophilus maltogenic amylase, was not found tosupport lactic acid production by Streptoccus sobrinusNRRL 14555. Furthermore, the synthesis of water-insolubleglucans from maltosyl-mannitol by S. sobrinus NRL 14555was much lower than that from xylitol or mannitol. Consequently,a noncariogenic sugar substitute in food products.
