Using hotel food and beverage (F & B) department as a study context, this study aims to identify the relationship between the management strategies and business performance in a rapidly changing business environment. The results show that F & B department employees’ perception about changes in their internal business environment did not influence any of their management strategies. This result may be attributable to the employees’ overconfidence in their actual jobs that they performed, as is typical of a survey method. However, the employees’ perception about changes in their external business environment appears to significantly influence their department’s offensive, differentiation, and defensive strategies. The result can be interpreted that the hotel’s food and beverage department reacted more sensitively to changes in its external environment than its internal environment. In addition, all of the management strategies had significant impacts on the hotel’s financial and non-financial performance. The differentiation strategy had a significant negative impact on the financial performance, and the defensive strategy had a significant negative impact on the non-financial performance. All other strategies had significant positive impacts on the financial and non-financial performance. These results indicate that a selective management strategy affected changes in the business environment, and that the business performance produced through the management strategies can all produce significant results. This study has implications as it provides the managers with directions for their decision-making against internal and external business environmental changes.
