Korean meat industry has faced a challenge that it must reduce the fat content in meat carcasses in order to provide nutritious products with decreased wasteful fat, while stimulating fat deposition in loin muscle as marbling, to increase meat flavor, tenderness and consequently palatability. It needs technologies to manipulate fat deposition in body fat tissue depot selectively. Adipose tissue is a multi-sited tissue occurring in a number of locations within the body, some within the abdominal cavity, some under the skin, some between and within the muscles. Numbers of researches have been conducted to characterize the depot specific growth, development and metabolism of adipose tissue. Progress has been made by use of cell culture techniques as specific cell lines are commercially available and adipocyte precursor cells can be isolated from adipose tissue. This approach has allowed identification of possible factors which may regulate adipocyte proliferation, differentiation, lipogenesis and lipolysis and metabolism of adipose tissue depots. Recently, with the advent of powerful biotechnological methods and tools, depot specificity researches are pursued more basically and comprehensively with integrated methods. The factors and mechanisms which influence the depot specific development is going to be applied and developed to life science technologies for medical or animal industrial purposes.
