There are continuos and several serious consideration what the current college education service providers produce. The problems are not related with proficiency in job duty of actual workplace positions but job attitude on work, and essential workplace skills. To generate considerable suggestions on this issue, the study developed new educational approach by using problem based learning in food and beverage courses. Then the new form of educational approach applied on the current students who were in culinary art major. The study used essential workplace skills assessment form to investigate the effects of the problem based learning approach in food and beverage course before and after semester. The study found that there were statistical significant difference on problem solving ability, application ability of technology and information, ability on personal relations, vocational ethics, and communication ability. There were, however, no statistical difference on mathematical ability, and self control and development ability. The research findings and problem based learning procedure of this study can be applied in other food and beverage operation courses for generating high quality of education in essential workplace skills development. The future research need to focus on long term prospective of the effects of the study, and personality aspects in the forming of study group during the process.
