Potential effects of postharvest exposure to near-freezing temperature (NFT) on the physiological changes and the incidence of flesh browning of 'Fuji' apples were investigated during cold storage at 0℃. Fruits were harvested near commercial maturity and exposed to -1.5 - -2.5℃ temperature for 15 days and then stored under air or elevated CO₂ conditions. Flesh browning, a typical high CO₂-related disorder, occurred from NFT-exposed apples, especially when fruits were stored under elevated CO₂ atmospheric (ECA) condition. In contrast, incidence of the disorder was significantly lower under normal atmospheric condition. Physiological changes observed after NFT exposure were increases in respiration rate and decreases in ethylene production potential. Changes in internal ethanol concentration seemed to be influenced by both NFT exposure and subsequent ECA treatment. Overall data suggested that flesh browning observed in the cold storage could be induced by prestorage NFT exposure and thereafter, the symptom may develop when CO₂ accumulate inside stores.
