본 연구는 저나트륨 식생활 영양교육 프로그램이 과체중 및 비만 중년 여성의 식습관 및 식사의 질 향상에 효과가 있는지 확인하고자 하였다. 식습관 및 식행동 향상의 효과는 나트륨과 관련된 지식, 나트륨과 관련된 식행동, 일반 식사상황을 통해 평가하였고, 식사의 질 향상 효과는 INQ(Index of Nutritional Quality), NAR(Nutrient Adequacy Ratio), DDS(Dietary Diversity Score), DVS(Dietary Variety Score), DQI-I(Diet Quality Index-international)와 같은 식사의 질 평가 지수를 통해 평가하였다. 대상자는 3곳의 보건소에서 모집한 45세 이상의 중년 여성으로 체질량지수에 따라 정상군 30명, 과체중-비만군 51명으로 나누어 교육 효과를 비교하였다. 과체중-비만군은 체중, BMI, %체지방량, 허리둘레, 수축기혈압, 이완기 혈압 모두 유의하게 감소하였고 정상군은 혈청 콜레스테롤, LDL 콜레스테롤, 공복 인슐린 농도, AI에 유의한 감소를 보였다. 식사일기를 통해 분석한 영양소 섭취량에서는 두 군 모두 나트륨 섭취에 유의한 감소를 보였다. INQ 평가 결과 전체 대상자에서 리보플라빈과 칼슘, 나트륨의 점수가 교육 후 유의하게 높아졌다. DDS와 DVS, DQI-I의 경우 총점이 두 군 모두 유의하게 증가하였고 정상군에서는 유의한 변화를 보이지 않았으나 과체중-비만군에서는 절제성 항목의 빈 열량 식품(empty calorie food)과 균형성 항목의 3대 영양소의 비율에 대한 점수가 유의하게 증가하였다. 나트륨과 관련된 영양지식 및 식행동의 총점은 두 군 모두 유의하게 증가하였고, 규칙적인 식생활, 균형 잡힌 식생활, 식생활과 건강에 대한 문항으로 이루어진 일반 식습관 조사에서는 두 군 모두 총점이 유의하게 증가하여 저나트륨 식생활 교육이 모든 대상자에게 전반적인 식습관 및 식사의 질 향상에 기여하였음을 알 수 있다.
