Soybean peroxidase(SBP) is known as an enzyme that has extremely high thermodynamic stability among plant peroxidase. SBP has a T<SUB>m</SUB> of 83.5 ℃ in neutral pH. In particular, the elimination of heme results in the considerable decrease of T<SUB>m</SUB> which is more than half as low as that of holoprotein of SBP. This means that interactions between heme and neighboring residues can contribute to high thermodynamic stability of SBP.
