Muscle atrophy due to aging and various chronic diseases leads to a decrease in muscle fiber area and density because of reduced muscle protein synthesis and increased protein breakdown. In this study, the protective effect of soy protein hydrolysate (SPH) on dexamethasone-induced atrophy was investigated in C2C12 myotubes and old Sprague-Dawley rats. To prepare the SPH, concentrate soy protein (CSP) was respectively digested with five types of food-grade proteases under different conditions, and then determined by SDS-PAGE.
