Postbiotics are heathy metabolic products in the cell-free supernatants of probiotics such as short chain fatty acids, amino acids, peptides, vitamins, etc. To enhance the stability and consumer preference, a model postbiotics, the L. casei supernatants (LS) were encapsulated in a mixed gel matrix with locust bean gum (LBG), and chicory fiber (CF). At neutral pH, a DDW/LBG/CF mixture produced a more elastic gel than a LS/LBG/CF mixture, and CF rarely affected the viscoelasticity of the gel even when 10% w/v was added.
