This study was conducted to evaluate the antioxidant and anti-skin aging effects of rutin treated by sub- and super-critical water (SW). The ABTS and DPPH radical scavenging activities of the SW treated rutin were increased to 541.86±33.65 and 728.73±1.34 mg AAE/g at 300°C in 100 bar but decreased to 500.78±12.08 and 694.88±4.69 mg AAE/g at 400°C in 250 bar, respectively.
